Same great taste as a flapjack, but in a cookie!

  • 40g Margarine
  • 40g Caster sugar
  • 2 tbsp Golden syrup
  • 50g Porridge oats
  • 30g Self-Raising flour
  • Pinch of Nutmeg
  • 25g Raisins or Chocolate chips (optional)


    1. Preheat the oven to 180C (356F)
    2. Beat together the margarine, sugar and golden syrup until a smooth paste
    3. Next add the oats and mix so that they are properly blended
    4. After the oats add the flour and nutmeg, once again mix thoroughly
    5. Stir in raisins or chocolate chips if desired
    6. Taking a greased tray, make 8 small balls from the mixture. Position them on the tray and pat down slightly
    7. Bake for 10 minutes until the edges of the cookies look golden. Note that when you first take them out of the oven they will still seem very soft. Leave them to cool before transferring to a wire rack, once cool they will become firm

Love this recipe. The cookies are amazing. The recipe above does make a really small amount of mixture so I double or treble it .. depending on how many I want to eat :)

This amount of mixture only made 6 cookies for us - we seemed to lose 2 with the amount of mixture stuck on our hands! They tasted lovely though, & my 3 old daughter had great fun making them. Next time I'll double the mixture & just spoon it on to a baking tray rather than using hands!

Absolutely delicious! Very moreish! However I found the amount of ingredients only made 8 small cookies. When I do this again (which I definitely will!), I will either double the ingredients or make half the amount to try and make them closer to the size in the picture!
