Gorgeous gooey brownies, perfect for those with special dietry requirements.

  • 2 bananas
  • 170g gluten-free flour
  • 2tbsp cocoa powder
  • 110g sugar
  • 140ml sunflower oil (or any other flavourless oil)
  • 140ml water
  • 1 tsp bicarbonate of soda
  • 75g pecan nuts (roughly chopped)


    1. Preheat the oven to 200C or for fan ovens 180C and grease and line a 10cmx15cm brownie tin.
    2. Mash then bananas in a large mixing bowl then seive the flour and cocoa into the banana.
    3. Add the sugar, oil and water (reserving one tablespoon)
    4. Dissovle the bicarbonate of soda in the one remaining tablespoon of water and then mix well with all the other ingredients.
    5. Once mixed, stir through the nuts and pour the mixture into the prepared tin.
    6. Bake for 40 minutes in the oven or until a skewer comes out clean when inserted into the brownie.

This recipe is a waste of good ingredients. Not only is the quoted baking tin size far too small for the mixture (had to do an emergency switch to a far larger tin), but the cooking time is too long and the result is HORRIBLE. It is tasteless, greasy, and has an odd, rubbery texture. I could cry at the waste of tasty bananas, muscovado sugar and quality cocoa. Unfortunately this will have to go in the bin as I can't think of anything to do to make it edible. I have given it one star but if I could have given it minus stars I would have.
