  • 200ml hot low salt vegetable stock (from a cube is fine)

  • 2 tbsp toasted pine nuts

Method

  1. Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper, and dice the cucumber. Add these to the couscous, fork through the pesto, crumble in the feta, then sprinkle over pine nuts to serve.

This is just delicious. I left out the toasted pine nuts the first time around - which is not advised as they really make the dish! Great for lunch boxes.

So easy to do and tasted great. My husband loved it. I'll definitely make this again but I might take out the cucumber and add another type of pepper.

Wonderful dish! I replaced part of the stock with fresh lemonjuice and added chopped fresh mint. It was great!

I left out the pesto (not too fond of it) but added more feta and a little sweetcorn... Delish!
