Ingredients

  • 1 fresh cauliflower
  • 1 handful green beans
  • 1 small onion
  • 200ml coconut cream
  • small knob ginger
  • juice of 1 lime
  • 1 tbsp brown sugar
  • 1 tbsp cajun
  • " coriander
  • 1 tsp caraway
  • " chilli
  • salt, pepper
  • serve with brown rice

Method

  • STEP 1
    Chop the cauliflower and steam the florets. Chop the green beans into short pieces. Start boiling the brown rice.
  • STEP 2
    Fry the onion with the spices, lime juice, ginger and sugar until the mixture is like chutney.
  • STEP 3
    Add the coconut cream and bring to the boil.
  • STEP 4
    Add the cauliflower and green beans and simmer for 5 mins.
  • STEP 5
    Serve with the brown rice.
