Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.
  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Making it veggie

Fry the tomatoes in the oil, add the pesto and creme fraiche and serve over griddled halloumi slices or spoon over some spinach and ricotta-stuffed ravioli.

    Errm hiya!! I tried this out last night (Valentines) and it was lovely, added some vegetables, And some warm crusty bread and it was delicious. I may have put a little too much pesto in which may be why it had a kick to it but yea, nice.

    I made this last Saturday night and was surprised at just how nice it was. I added mushrooms and some chicken stock to give it a more meaty flavour but I'm certain that wasn't necessary. I will definitely be making this again.

    We found this recipe really quick and easy, and not too many ingredients which is a bonus. It was very tasty, with much more flavour than I expected (definitley think you'd have to make the sauce in the same pan as you'd cook the chicken for the flavour - rather than grilling or cooking separately and making sauce separately as some people have suggested). We will definitely make this again.

    Fabulous recipe - quick and easy to make, and very tasty. Cooked the chicken, then removed from the pan and made the sauce before returning chicken to the pan. Served with baked potatoes - excellent for mopping up the sauce.

    to make this suit my one year old son i just dice the chicken breast and use ordinary tomatoes that i remove the seeds from and chop up in small pieces. served with mash, he loves it.
