Very easy to make

  • 200g butter
  • 200g muscovado sugar
  • 2 tsp ground cinnamon
  • 4 tbsp honey
  • 500g muesli
  • a handful of pumpkin seeds
  • a handful of chopped dried apricots


    1. heat the oven to 180C. Melt the butter, sugar and honey together with the cinnamon and simmer for 2 minutes. stir in the muesli, pumpkin seeds and dried apricots.
    2. pack the mixture into a lined baking sheet, cover with foil and bake for 15 minutes. leave in the tin for 10 minutes, then loosen the edges and turn out. slice into squares and serve cold.

Didn't work out well at all, mixture crumbled on cutting and I ended up with a tin of crumbs instead of bars. Taste was okay, but the mixture as stated didn't hold its shape at all.

These are great but you only need half the amount of sugar recommended and they still taste sweet.

Yummy recipe, I only used 400g of muesli and put some plain cereals to substitute the other 100g, just gave it an extra crunch, also I used some Italian strawberry honey which made them even more delicious! Flapjacks/muesli bars are SO adaptable!

Made this as my no. 1 daughter has gone back to uni and no else eats museli. It was very easy and quike to make, I did not have any pumpkin seeds so left them out. No. 2 daughter and her friend loved it. :-)
