  • 1 small garlic clove, chopped
  • small splash white wine vinegar
  • ½ lime, juice only

Method

  1. Combine the tomatoes, red onion, garlic, white wine vinegar, lime juice and coriander in a bowl. 

  2. Stir then refrigerate until ready to be served.

This is delicious although for some reason my tomatoes were a bit pale once they had been skinned. The flavour was lovely.

Made this to go with Homemade Turkey Burgers. Was so lovely. Very fresh tasting. The coriander flavour is pretty strong so use less if it’s not your thing! Used lemon juice as had no limes! Will definitely make this again.

This was a lovely accompaniment to a salad we had with chicken and potato wedges. I didn't skin the tomatoes because I'm too lazy, but that was OK. I'll definitely make this again.

I didn't have white wine vinegar, but I added fresh chillies and cayenne pepper. Went down very well.

Love this salsa! I'd made salsa before without any vinegar and it had never tasted quite right, a splash of vinegar makes all the difference! The only thing I did differently was I didn't peel the tomatoes and I added about 1/2 tsp cayenne pepper (would have used fresh red chilli if I'd had it) to give it a bit of a spicy kick.

Thanks for your question. This recipe does not freeze well. We'd recommend making it and serving it fresh.

Lovely chunky, fresh salsa however if you like it a bit looser like myself just add a small amount of tomato passata.
