  1. Heat the olive oil in a large pan. Add the onions and cook for 8-10 mins until softened. Add the mince and brown all over. Once browned, add the garlic, tomatoes, chipotle paste and chicken stock, and bring to the boil. Turn down to a simmer and cook, uncovered, for 35-40 mins, adding a splash of water if it looks too dry.

  2. While the turkey cooks, boil the pasta following pack instructions, then drain, reserving some of the water. Warm through the mascarpone with a splash of the hot pasta water over a low heat. Add 140g cheddar, season and stir to combine.

  3. Heat oven to 200C/180C fan/gas 6. Transfer the turkey sauce to a large baking dish. Stir the cheese sauce through the pasta and pour over the mince. Sprinkle the remaining cheddar and the parmesan on top. Bake in the oven for 20 mins or until golden and crisping at the edges.

Delicious! Went down a storm with the family and my 3 kids all wanted the leftovers in their lunch boxes the next day. The only down side was that it took longer than I expected ( I hadn't read the recipe properly ) . Used creme fraiche as didn't have any mascarpone. Will try to make it even healthier next time with low fat creme fraiche.

Great recipe. We make this regularly now. Nice change to have the turkey mince to beef (and leaner too, if that is something that is important). Have used chilli flakes previously when didn't have chipotle paste, and again this is fine. We tend to make the full amount of turkey mince and then freeze half for another meal, making only half the cheese pasta topping. Half the recipe easily serves 2-3 (depending on how hungry you are). Personally I find it it tastes nicer fresh than when leftover.

I didn't have any mascarpone, so used fat reduced crème fraiche instead - turned out fine. the family liked it, so I'll add this recipe to my weekday meal choices.

Absolutely gorgeous, family really enjoyed it apart from my youngest wasn't keen on the Turkey mince so going to try beef mince instead next time

New family favourite. I took out the chipotle as found it over powered the dish, and added a bit of cayenne pepper to the cheese sauce. Love it!

This is really good for feeding a crowd. Very easy and a good combination of flavours. Definitely use the large shell pasta as it makes it a bit unusual.
