
Salmon & veg with sautéed potatoes

Ingredients
- 15g unsalted butter, melted
- 1 tbsp olive oil
- 3 garlic cloves, finely grated
- 1 tsp mixed dried herbs
- 800g new potatoes, halved or quartered if large
- 4 salmon fillets, skinless
- 1 lemon, sliced, plus wedges to serve
- large handful dill, plus extra to serve
- 400g long-stem broccoli
Method
- STEP 1
Pull out the legs on the crisper tray and add to the Ninja Speedi pot. Combine the butter, oil, garlic and herbs in a large bowl. Toss with the potatoes, season well and tip onto the crisper tray. Add 2 tbsp of water under the crisper tray. Close the lid, switch the SmartSwitch to ‘Rapid Cooker’ and set to ‘Steam & AirFry’. Set the temp to 160C and the timer to 15 mins. The pre-heat will start and once that ends, the 15 mins will start.
- STEP 2
While the potato cooks, season the salmon fillets. After the 15 mins, remove the potatoes and crisper tray, and add a layer of lemon slices, herbs, the broccoli and then add the salmon on top. Return the crisper tray and potatoes, and cook for a further 5 mins. Check to see if the salmon and broccoli are cooked through – you might need to add an extra 2-3 mins.
- STEP 3
Serve the salmon with the broccoli, potatoes and lemon wedges to squeeze over, plus a sprinkle of dill.
