  • 250ml chicken or fish stock
  • 100g crème fraîche
  • 140g frozen peas
  • 140g frozen broad beans
  • 4 skinless salmon fillets
  • small bunch chives, snipped
  • mash, to serve


  1. Heat the oil in a large, deep frying pan with a lid. Cook the leek for 5-10 mins until soft but not coloured, then pour in the stock. Simmer for a few mins until reduced slightly then add the crème fraîche and season. Cook for 1 min more.

  2. Tip in the peas and beans, nestle in the salmon fillets, then turn down to a simmer and cover. Cook for 12-15 mins, depending on the thickness of the salmon, until cooked through. Sprinkle on the chives and serve with mashed potato, if you like.

Love this recipe, it's a staple for us. I don't add the peas and broad beans until much closer to the end, because 12-15 mins is too long in my view and they lose their vibrant green colour. I also like adding a bit of lemon zest and a squeeze of lemon juice too. I sometimes make it with lightly smoked salmon which is also delicious. I've served it with mashed potato and with pasta, and I like both. Yum!

Made this almost exactly as per the recipe (with fish stock from a cube). Very very tasty, and so simple to make. The only minor changes I made were doubling the olive oil to 2 tablespoons and replacing the broad beans with edamame beans, just because I had some in the freezer. Served with creamy mashed potato.

Really lovely - used fish stock and left out the broad beans preferring to serve it with fresh broccoli and kale and mash or new potatoes. So quick and moreish and pretty healthy too!

Absolutely delicious! Much nicer than I thought, considering how simple it is. Found the instructions absolutely spot on, including timings. I used French beans instead of broad beans, and next time would probs double everything except the salmon, as found I could have eaten far more veg - was so tasty! Served with mashed potato, but may try pasta next time, just to mix it up.

Good quick and easy family meal. Kids love it with salmon and also the chicken. I also add mange tout to the pan for the last few minutes. Serve with Broccoli, and asparagus and with boiled new potatoes or rice

WOW! Blown away by this beautiful NOT a fish eater at all and certainly not a cook but found this and gave it a go just finished eating it and it was perfect i will definatly be eating alot of this..swapped broad beans for love loovvveee this :)

I made this using and onion instead of a leek, adding some frozen spinach and instead of mash stirred through some tagliatelle at the end and it worked quite well again using all the sauce for only two else wouldn't have been enough for the pasta. Would def make it again!

This recipe is great! Simple and delicious! I've been looking for a simple fish dish and this is perfect. I use a large leek and add very thinly sliced garlic to the sliced leeks. Rather than broad beans and peas, I used french beans and frozen mixed vegetables. I also used the full amount of liquid for 2 fillets and that was fine. Served with little roasted charlotte potatoes -yum!

Oh my goodness .. this was delicious!! I had to give the Salmon 5 minutes longer than recommended as the fillets seemed quite thick and I put frozen Soya Beans in place of the Broad Beans just out of family preference, and served with steamed home-grown Charlotte Potatoes, and it was so, so good. It is definitely a "keeper"! And, we think it's equally as good as the roast salmon with peas, potatoes and bacon also from this site.
