  1. Heat oven to 190C/170C fan/gas 5. Brown the pork in a non-stick frying pan over a high heat for 4-5 mins, turning twice. Mix the oil, 2 tsp cumin, cinnamon, 2 tsp ginger and some seasoning, then rub all over the pork. Transfer to a roasting tin and roast for 30-35 mins or until the juices run clear when the thickest part is pierced with a skewer.

  2. Mix the couscous with the remaining cumin, the sultanas, lemon zest and juice, then season and pour over 400ml boiling water. Stir well and cover for 5 mins, then stir in the mint.

  3. Stir the remaining ginger and a little seasoning into the yogurt. Thickly slice the pork and serve with the couscous and ginger yogurt.

I notice someone says the soy sauce makes the meat moist but there is no mention of soy sauce in ingredients list or method??

this is one of the best pork I've eaten. I cook this quite often. Some don't like the cinnamon but you can't really taste it. Really nice dish. The soy sauce make the meat really nice and tender. My friends also love this dish!! delicious! will be making today again.

Hi, Could you help, it states 284 K per portion, whta exactly is a portion and i presume this takes into account the couscous? Regards Steve

Delicious - only thing I did different was leave out the sultanas (not a fan!) and served it with broccoli.

Great, easy, tasty dish. I bought lemon couscous and added sultanas and bought Tzaziki - cheated a little but the pork was lovely!! Served with sugar snap peas. A good combination of flavours - will do again.

We cooked this for an informal dinner with a friend, halving the quantities to feed 3 people and it was delicious. The pork was so tender and the spices combined really well. Yougurt on the side was fantastic. Didn't have any cumin so used mild chili powder. Also instead of serving with couscous, I teamed the pork with simple boiled new potatoes, a tomato salad and some roast veg. No leftovers!
