  1. Heat oven to 220C/200C fan/gas 6. Measure out 1½ tbsp of oil from the grilled artichoke pack. Mix this with the olive oil, oregano and cumin. Put the chicken drumsticks and squash in a large roasting tin, toss in the flavoured oil and some seasoning.

  2. Roast in the oven for 45 mins until tender and golden, then tip the artichokes and olives into the pan. Give everything a good mix, then return to the oven for 5 mins to warm through. Stir through the rocket and serve.

Adapted slightly because I couldn't fit it in one singular tray with the size of mine, I seasoned it by eye, not by measurement, because I always do, and made sure to put salt and pepper in too, but the combination of ingredients works well. I'd use a few less olives next time, they could occasionally overpower the sweetness of the squash.

Sadly we didn't like this one. The herbs and spices were good with the chicken and squash, but the addition of olives, artichokes and rocket tasted strange. Too greasy too.

What do you do if you can't find the pack of grilled artichokes in the supermarket? Or can you please recommend a supermarket where they can be bought? Thanks!

Thanks for your question. You can buy chargrilled artichokes at larger supermarkets including Tesco, Sainsbury's and Waitrose, either in the deli foods section or in jars. We hope this helps.
