Ingredients

  • 4 skinless, boneless chicken breasts
  • 25g garlic butter, softened

  • 25g crispy breadcrumbs

Method

  1. Place the chicken on a baking tray, rub with a little of the butter, season and cook under the grill for 15 mins, turning once until cooked through.

  2. Mix together the remaining garlic butter and breadcrumbs. Remove the chicken from the grill and top each breast with a smear of the breadcrumbed butter. Return to the grill and cook 3-5 mins until the breadcrumbs are golden and the butter melted. Serve any buttery juices, alongside new potatoes and peas or broad beans.

I cooked mine in the oven, not the grill...not sure if this recipe has confused the two as it says 'heat the grill' but then doesn't say to use it!! I also added more garlic butter and crushed a couple of garlics, and even then it wasn't overly garlicy - though still very tasty! I also made a small hole in the chicken before cooking and then pushed some of the garlic butter in to add extra taste to the middle of the chicken! Will definitely make again - lovely!

I made this for sunday lunch and served it with "All-in-one cabbage with beans & carrots" and it was delicious and so easy to make.

Need to up the garlic next time as the taste was quite subtle. Served with John Torode's herby new potatoes and sauteed leeks. Simple, easy and low fat. Great recipe

Made with with home made garlic butter and put it in the oven - it was delicious - beautifully moist chicken. The other half loved it so will be making this one again!

I think this is a great store cupboard recipe and is something I fall back on regularly when I haven't had time to go shopping as I always have chicken breasts (defrosted from frozen), garlic, butter and breadcrumbs. I use the chilli and coriander breadcrumbs from Waitrose and serve with sautéed potatoes and steamed veg. It's brilliant.

Made this for dinner today,the only change I made was added a bit more garlic to the breadcrumbs. The whole family enjoyed it and thought it tasted better than a shop bought kiev. So this will be a regular in our house :-)
