  1. Put the peanut butter in a small bowl and stir in 3 tbsp of just-boiled water until smooth. Add the chilli sauce and lime juice, and mix well.

  2. Cut the chicken breasts into thin slices and place on a board with the bowl of peanut sauce. Put the lettuce leaves, spring onions, cucumber and carrot in separate piles alongside.

  3. Put slices of chicken into the lettuce leaves, then top with the vegetables and peanut sauce.

I was a little concerned that my husband would find this too ‘light’ and not satisfying enough but we both absolutely loved it and, as other reviewers have said, it really is very filling - and exceptionally tasty. I think the only thing I would change, in an effort to reduce the calorie, is instead of standard peanut butter, I will change to the no added sugar variety and then add some Stevia to the sauce. We will definitely be eating this again and again!

These are very tasty, and simple to put together (apart from the fiddly veg chopping!) They're fun to eat, and healthy yet surprisingly filling.

This was great- and despite how simple and low calorie it is, I thought it tasted great and kept me full. You just need to have the patience to cut the veg up really small!

Such a lovely and quick dish. I brought in the ingredients to work and assembled the cups for my lunch.. Everyone was jealous! It was so tasty, I cut it down by more than half for just me but a little goes a long way and I don't feel hungry, which after a salad might often happen! Will make again very soon.

So easy, so light and so tasty! A wee sprinkle of salt once assembled finishes it off. Would make a nice light dinner party starter or light dinner.
