    1. Make the dressing by mixing the oil and citrus juices together in a small bowl with some salt and pepper, then set aside.

    2. In a bowl, toss all the other ingredients, except the rocket, together with the orange segments and half of the dressing. Scatter the rocket leaves into 4 Martini glasses or small bowls, pile the salad into the centre, then drizzle with the remaining dressing just before serving.

    Made this the second christmas as a starter and it works. Leftovers the next day are also a bonus. Light, refreshing and easy to make in the morning. Highly recommended!

    This is a good starter for a dinner party, easy to make and flavour combo's very good. Thought the fennel would overpower, but it doesn't. Its also an attractive presentation if put in glass dishes, as on photo, if you have any.

    I made this when we had friends round for dinner and it was delicious! I was slightly dubious about the flavour combinations but it really was very tasty : ) This recipe gets 5 stars!

    I have made this many times now, as a starter to a dinner party and as a light suppe. It is always good and received well. I have not changed anything as it is fantastic as it is.

    I tried this out as a starter for a dinner party and everybody loved it. It is really easy to prepare and absolutely delicious. My husband loves it as a light evening supper dish.
