chickpea salad with feta

Ingredients
- 3 tbsp extra vergine oliveoil
- 1 red onion
- 3 gloves of garlic, crushed
- 1 red chilli
- 300 gr chickpeas
- 100 gr feta crumbled
- some coriander and parsley
- 2 tbsp chives or mint
- 1 tbsp lemon juice and zest
- salt and pepper to season
Method
- STEP 1Fry the onion in the olive oil and add the garlic and red chilli. Fry this of for several minutes and put it in a bowl
- STEP 2Add the chickpeas and mix it well
- STEP 3when everything is at room temperature add teh feta and herbs
- STEP 4season it with lemon juice - zest and salt and pepper
