Moist banana cake, easy to make and uses up overipe bananas

  • 2 ripe bananas (overipe is best)
  • 170g caster sugar
  • 170g self raising flour
  • 170g soft margarine
  • 3 eggs
  • Fewdrops vanilla essence


    1. Use a food processor Pre heat oven to 160C / gas mark 3
    2. Add all ingredients and blend until well mixed
    3. Pour into lined loaf tin
    4. Bake for 1 hour
    5. Cool and enjoy
    6. If you are a nut lover, once ingredients are blended add 60g chopped walnuts and blend in to the mixture

I've made this loads of times now and a few times I've had the greasy stodgy result and I have to say that it seems too be influenced by the size of the eggs and bananas. If they are pretty large then reduce the butter by 20g but if both your eggs and your bananas are fairly small then keep it the same. About to make it again for the third weekend in a row :-)

This cake is utterly amazing. I could easily eat the whole lot to myself especially as I've topped it with a cream cheese icing. Will be using this recipe again very soon.

:( Have to agree with the comments about it having a lovely crust and aroma (and taste - because I did eat some anyway!) but it just stayed like a stodgy batter inside. Shame.

So easy to bake, always gets loads of compliments for being light, moist and with a crunchy crust. Sometimes I chuck in some chopped dark chocolate to be extra naughty.

Love this wee recipe, I prefer to blend butter & sugar seperately tho & fold flour in woth a metal spoon!! Brought it to a family get together & went down a storm!! About to make some more for my hubby now he loves it!! Light fluffy, just right!! Best banana recipe I've tried!!!

Yum. If you prefer slightly less sweet, try 100g xylitol and 70g dedicated coconut instead of the sugar. Omitted nuts and added a handful of sultanas. Yu-um!

After reviewing this recipe I checked other banana cake recipes and realise for it to work there should be less fat but more flour. Sorry no stars.

I cannot believe anyone has ever tried this recipe. Baked it today - utter disaster. Took 2 hours in cooker, fan at 170c. Far too much fat, just greasy mess. When removed from cooker just collapsed. Followed the recipe exactly, so there is something wrong with balance of ingredients. Don't waste you time. Will not do again.

Baked this today and it is delicious. I used half butter and half margarine. Also just used a hand whisk to mix butter and sugar until blended then added the rest of the ingredients and mixed until this was blended. Added a handful of chopped walnuts too. Baked in a loaf tin for 50 minutes, then very quickly sprinkled a topping mixture (PREPARED EARLIER) of : : 2 tablespoons flour, 1/4 cup dark brown sugar and a small knob of butter, mixed all together to look like breadcrumbs. Then baked until cooked, another 15 minutes in my oven. Will definitely bake again!
