  • 150g dark chocolate, 70% cocoa solids
  • 275g caster sugar
  • 225g digestive biscuits, crushed
  • 160g Butter, melted
  • 2 tbsp Sugar
  • 500g full-fat soft cheese
  • 142ml carton of Soured cream
  • 1 tsp vanilla extract
  • 4 eggs

Method

    1. Preheat the oven to 170°C/gas mark 3.
    2. Melt the chocolate and 125g of sugar in a bain-marie (a bowl suspended over a pan of simmering water). Set aside to cool slightly.
    3. Meanwhile make the biscuit base by mixing together the crushed digestives, melted butter and sugar. Press into a 20cm spring-form tin.
    4. In a large bowl, beat the cream cheese, remaining caster sugar, soured cream, vanilla extract and eggs until well-mixed.
    5. Pour half the mixture into the bowl with the melted chocolate and mix in thoroughly.
    6. Spoon in alternate amounts of the plain vanilla mixture and the chocolate one onto the biscuit base. Bake for 50 minutes until firm, cool before serving.

Tasty recipe! I've also made a reduced fat & sugar version by making the following changes. The taste and texture were still great and I felt a lot less guilty about eating a third of it myself. BASE: -- Use reduced fat digestives -- Omit the 2 Tbsp of sugar -- Reduce butter to 140g CHOCOLATE MIX: -- Reduce sugar to 100g CHEESE FILLING: -- Use the same amount of half fat cheese (Waitrose own and Philadelphia both work) -- Add 2 Tsp of vanilla extract -- Use only 3 medium sized eggs -- Use 1-2 Tbsp's of half fat sour cream -- Reduce sugar to 110g NOTE: - You may need to bake for an extra 10 minutes. I find that leaving it too cool in the oven, also helps. Enjoy!

Very easy to make and turned out perfect for mothers day lunch. I have a feeling that the children have a new favorite dessert !!!

would this work with quark or do you really need a full fat cheese?

Hob nob biscuits are also nice used as the base.
