  • 1.2l vegetable or chicken stock
  • handful coriander (about ½ a supermarket packet)


  1. Heat the oil in a large pan, add the onion, then fry for 5 mins until softened. Stir in the ground coriander and potato, then cook for 1 min. Add the carrots and stock, bring to the boil, then reduce the heat. Cover and cook for 20 mins until the carrots are tender.

  2. Tip into food processor with the coriander then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

This was nice but it didn't set my world on fire! It was really simple to make and perfectly edible but I don't think I'll make it again. Purely my taste rather than a bad recipe.

Made this for lunch as a change from my usual low calorie soup and it was lovely. So easy to prepare too!

Great, easy to make soup that the whole family can enjoy! One tip: you do not have to peel the carrots! I washed the smaller carrots and only peeled the large ones! Also I used a medium sized potato as it did not say what size and this worked fine! really yummy soup!

Delicious soup!!! Making it again today. So cheap to make as well!!!! Didn't have fresh corrriander last time but still tasted fantastic.!

Love this soup quick and easy to make. i always have it with a hot crusty bun straight out of the oven
