Tomato based sausage casserole, a healthy(ish!) cheap family meal.

  • 8 Good quality pork sausages, snipped/sliced into bite size
  • pieces (about 6 pieces per sausage)
  • Tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 red pepper, chopped
  • handful chestnut mushrooms, sliced
  • 4 sundried tomatoes
  • Small glass red wine
  • jar of passata
  • 1 Tsp sugar
  • 1/2 tsp paprika
  • handful chopped basil


    1. Gently fry the sausage in a large pan (a wok is good) in the olive oil until cooked through and golden brown.
    2. Remove sausage and keep to one side. Now, in the same pan fry the onions and garlic untill softened. After 5 mins or so add the peppers, mushrooms and sundried tomatoes, cook for a further few mins then return the sausages to the pan.
    3. turn the heat up high, add the red wine and cook for a few mins to reduce slightly.
    4. Add the passata, sugar, basil and paprika and simmer for half an hour. (or as long as you want really the longer its left the better the taste its amazing reheated the next day!)
    5. Season to taste if liked and serve with fluffy rice, crusty bread or with pasta. Try with any other veg in you like.

Everyone in my family loves this recipe. Its so easy to make and works if you have 30 mins or 2 hours or even better if you make it the night before.

Did this when friends came round with their kids (8 and 14), went down extremely well even for younger ones who aren't keen on spicy food - thanks!

Excellent! Made several times now. I sometimes fry some fresh chillies in with the sausage. Would only say be cautious in adding much sugar.

I love this recipe, its fantastic--though I add a little extra Paprika & a Dash of Worcestershire Sauce & a little Chorizo to give ti a boost--I'll be making this on a regular basis! Have made it twice With & Without Sundried Tomatoes, didnt really notice any difference so will be leaving them out due to cost.

The nicest receipe I have ever made. I try to make something new every week at least and this is the nicest thing I have ever made. I added chorizo like suggested plus more wine and more onion. It was lovely.

Very easy to make and very tasty! Approved by hubbie and two kids too :) Will probably add some chopped bacon in next time

I made this as a tasty supper dish for my partner served with creamy mashed potato and green beans. It worked really well. Nice easy recipe and I'll be making it again!

Fantastic recipe, very easy. Didn't have fresh basil or sundries tomatoes but still produced beautiful sauce. Try it!
