Make a classic coronation chicken filling to serve with jacket potatoes or in sandwiches and salads. It's an excellent way to use up leftover chicken after a roast

  • 6 tbsp mayonnaise
  • 2-3 tsp mild curry powder, to taste
  • ½ tsp ground cinnamon

  • 1-3 tbsp sultanas, or to taste
  • 500g shredded cooked chicken

  1. Mix the mayo, curry powder, cinnamon, chutney and sultanas together and season with black pepper. 

  2. Add the shredded chicken and stir to coat in the sauce. Stir in 2 tbsp water to loosen if needed, then season and serve as desired.

Easy peezy! My husband was most complimentary too!! :-D I added diced dried apricots and a pinch of fresh coriander to mine as I wanted to replicate the coronation chicken that is sold on Waitrose deli counters.

Added some ground cumin by mistake, and used medium curry powder. Didn't have any mango chutney but added mango salad dressing. Tastes nice definetly be making again.

i made this on sandwiches for work i only had chicken and pepper but added salt it was delicious

Been looking for a recipe that doesn't necessarily need dried fruit as hubby not a fan. Spectacular was the response.

I think 'shredded' is rather too strong a word. If I had seen the photograph of the finished article before I used the recipe I would not have reduced the chicken to such small pieces.

The best thing about this is you can add what you like so it's suited to your taste......We had it with the mango chutney and it was delicious
