Method

  1. Heat oven to 180C/160C fan/gas 4. Grease a 2lb loaf tin with some butter and line the base with baking parchment, then grease this as well.

  2. In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.

  3. Pour your mixture into the tin and bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin. The loaf can now be wrapped tightly in cling film and kept for up to 2 days, or frozen for up to 1 month. Defrost and warm through before serving. Serve in thick slices topped with vanilla ice cream and drizzled with a little Easy chocolate sauce (see recipe, below).

Just made if and it is lovely!!! Moist, light and tasty! Would definitely make again. I added milk in at the very end with walnuts

Another great tip! Crush some extra walnuts in your hand and sprinkle over the top of the mixture before you put it in the oven, this gives it a lovely sweet nutty crunch. If your feeling extra sweet a sprinkle of golden caster sugar too!

I used golden caster sugar rather than normal caster, only 3 bananas (as it seemed too bananary the 1st time) and added a dash of mixed spice and cinnamon, absolutely delicious! Serve with fresh cream poured over whilst still warm rom the oven. Once cooled its a lovely treat with a cup of tea with a blob of extra thick double cream. Enjoy x

this recipe makes a wonderful nutty banana loaf. After an hour of baking I put the temperature up to gas mark 5 and cooked for another 15 minutes. It didn't sink and has still lovely and soft on the inside. Will be making it again!

Followed recipe to the letter. The loaf looked lovely when it came out of the oven. Left it in the tin for an hour to cool then cut some slices and what I got was a sludgy,gloopy consistency. Horrible! This is the worst thing I have baked in years. What a waste of ingredients. Don't bother!

I've made this many times, it's so good. Easy to make and tastes lovely. Makes a great easy pudding for family and great with a cuppa!!

Just made this...tastes lovely! I just used 3 bananas and added some chopped toffees to make banana walnut and caramel loaf. Will definitely use this recipe again!

I tried this receipe for the first time today, followed receipe exactly and it came out great. Very moist & fluffy, accept I had to leave it in the oven for a lot longer than an hour, closer to 1hr30min at gas mark 4. Might try it with a higher gas mark next time.

I loved this recipe - really moist and light. I only used 3 bananas and added poppy seeds with a crunchy sunflower seed topping instead of walnuts - delicious!
