Ingredients

  • bought slab of Madeira cake
  • 8 meringue nests
  • 500ml tub crème fraîche
  • jar of good quality lemon curd
  • red summer berries to decorate

Method

  1. Line the base of a 20cm round springform cake tin with greaseproof paper. Cut the Madeira cake into 1cm slices and use to line the base of the tin. Fill in the gaps between the slices with small pieces of cake.

  2. Break the meringues into pieces and put into a large bowl. Tip in all the crème fraîche and fold together. Dollop large spoonfuls of the meringue mixture and lemon curd into the tin. Don’t stir. Spread level with a palette knife, then tap the tin on the counter surface to make sure the mixture is packed down. Freeze for at least 4 hours.

  3. When ready to serve, remove the cake from the tin and put on a serving plate. Decorate with red summer berries.

Really tasty and super quick to make! I made mine with crushed ginger biscuits and butter as the base instead of Madeira cake, tasted really good :)

Love this speedy dessert. It is so easy to make and hard to believe it tastes so good when so simple to make. I have made several times and am always asked for the recipe. Make in advance and keep in the freezer for when you need an impromptu dessert. I always serve with raspberries. Take out of freezer a little before serving to make it easier to slice. Also good with orange curd.

My daughter made this for hubbies birthday and used gingernut base instead of sponge. Topped with blueberries and strawberries. Amazing! We all had two slices. Irresistible

Really easy and tastes very refreshing. Maybe would try a biscuit base next time to add a different texture as cake is quite soft with ice cream. X

I am always on the look out for an easy dessert, I can spend hours cooking starter s and mains but as I am not really a dessert person so this was a delight to make and so quick. I doused the cake with a little limoncello, before topping with the other ingredients and it went down really well at a family BBQ along with a pear and amaretti cheesecake. Will certainly make again.

Can't believe anyone doesn't like this! My favourite "cheat's pudding" and yes, everyone thinks I'm fibbing when I say how easy it is. Haven't had the meringue dissolving - I wonder whether people did smash the pieces up too finely? Usually love to spend ages making elaborate desserts but great to have something like this up my sleeve for the right occasion.

Brilliant, quick and easy make ahead pudding. I made this for a new years eve party as an alternative to heavier puds. Went down a treat. Everyone loved it and most had two helpings! I love the fact that you can make it the day before. Well worth a go. I am trying to work out how to make a smaller version for a more intimate dinner party.
