For The Pork & Apple

  • 2 Pork Loin Stakes
  • 1 Large Eating Apple
  • 1/2 - 1 Chilli
  • 1/2 Can Coconut Milk
  • 1 tsp Mixed Spices
  • Dash Pepper

For the Mashed Potato

  • 4 Potatoes (Best with good all-rounders)
  • 6 tbsp Milk
  • 4 tbsp Butter
  • Dash Pepper

Method

  • step 1

    Prepare potatoes (I prefer to leave the skin on, but the choice is yours) and put onto boil
  • step 2

    Slice Apple & Chilli and add to an oiled pan
  • step 3

    Add pepper & mixed spice and Fry for 5-10 minutes until soft
  • step 4

    Add Pork and cook thoroughly (5-10 minutes) Turning occasionally
  • step 5

    Add coconut milk and cook for a further 10 minutes
  • step 6

    Drain potatoes and add butter & coconut milk then mash until smooth
  • step 7

    Plate up and add mixed vegetables if desired
