Ingredients
For The Pork & Apple
- 2 Pork Loin Stakes
- 1 Large Eating Apple
- 1/2 - 1 Chilli
- 1/2 Can Coconut Milk
- 1 tsp Mixed Spices
- Dash Pepper
For the Mashed Potato
- 4 Potatoes (Best with good all-rounders)
- 6 tbsp Milk
- 4 tbsp Butter
- Dash Pepper
Method
- STEP 1Prepare potatoes (I prefer to leave the skin on, but the choice is yours) and put onto boil
- STEP 2Slice Apple & Chilli and add to an oiled pan
- STEP 3Add pepper & mixed spice and Fry for 5-10 minutes until soft
- STEP 4Add Pork and cook thoroughly (5-10 minutes) Turning occasionally
- STEP 5Add coconut milk and cook for a further 10 minutes
- STEP 6Drain potatoes and add butter & coconut milk then mash until smooth
- STEP 7Plate up and add mixed vegetables if desired
