  • 1 small vegetarian Camembert or other rinded soft cheese, sliced with the rind on
  • 1 tbsp thyme leaf

Method

  1. In a shallow microwavable dish toss the leeks in half the butter and cook on High for 5 mins until they begin to soften. Stir in the cabbage and mushrooms and add the crème fraîche. Lay the potato slices over the vegetables pressing them down with a fish slice.

  2. Dot the potatoes with the remaining butter and microwave, uncovered, for 15-20 mins on High until they are done. Scatter over the cheese and thyme, and either microwave on High to melt for 2 mins, or grill until crisp and brown. Leave to stand for a few mins and serve straight from the dish.

This was all kinds of wrong, wrong, wrong! Not one bit went right. Undercooked potatoes, split créme fraîche and a puddle of watery vegetables!!!

I wish this site would given an oven alternative when they give microwave recipes because not everybody has a microwave!

Yummy - I added a layer of fresh tomato on the bottom, a bit of cambazola blue Brie in with the cabbage and leek mix rather than putting cheese on top. Did all in the oven / grill. I sprayed top with light olive oil rather than using butter. Am definitely going to cook again!

I used a random combination of veg and a bit of double cream that needed using up. Also used parmesan cheese and cooked it in the oven as I don't have a microwave. Despite losing my connection to the site and having to make the recipe up, it turned out a treat - can't really go wrong with this one! Even managed to get my partner to eat cabbage! I would definitely recommend seasoning with salt and pepper though.

well that's tonights supper sorted but need to change cheese as husband hates camembert. look forward to trying it depite differing comments on this one. it sounds good to me

I used only 1 leek (as I only had 1!) but it was quite nice, reminded me of bubble and squeak. We had it as a main course but it would work great as an accompaniment to meat or fish. A great and cheap way to use up all the lonely odd vegetables and sprouting potatoes lying about, as I'm sure it can be made with any combination, and any cheese you like, doesn't absolutely have to be camembert.

would this work with cheddar or parmesan? i dont like camembert...?

Boy that was good :-) Didn't make it by using the microwave, the technology is still too new for me! I used red onions instead of leek, as I didn't have any. I also added half a courgette as I was a little light on the mushrooms. I will make this again and again as I always seem to have half a pot of creme fraiche that I do not know what to do with. Thanks Mr Desmazery.
