  • 1 tin of chopped tomatoes
  • 4 small sweet shallots
  • a sprinkling of chopped garlic or 1 garlic clove
  • Salt and pepper seasoning

Method

  • step 1

    Add a generous amount of olive oil in a frying pan and heat until boiling and bubbling
  • step 2

    Meanwhile chop the shallots roughly and add into the pan, mixing with a wooden spatula until slightly brown and crispy in some places
  • step 3

    Add the tin of chopped tomatoes and mix with the onion
  • step 4

    Mix in the garlic and the seasoning
  • step 5

    Bring to the boil and then simmer for 5 minutes, allowing the flavours to develop.

I make tomato sauce for pasta often and I would never use a generous amount of oil without draining it off before adding the onions or shallots to the tomatoes. To intensify the flavour I would also cook it all with the lid on for a good half hour, removing the lid for another ten minutes or so.
