Ingredients

For the base ingredients

  • 50g jumbo porridge oats
  • 50ml apple juice
  • large pinch cinnamon
  • large pinch nutmeg
  • 1 medium apple, cored and grated
  • 2 tbsp low-fat natural yogurt

For the topping

  • 25g chopped pistachios
  • 3 tbsp pomegranate seeds or mixed berries

Method

Mix all the base ingredients, except the yogurt, with 150ml water and leave to soak for at least 20 mins or overnight, if possible. Once the oats have softened, stir through the yogurt, then divide the mixture between 2 bowls. Sprinkle half of the topping over each bowl and serve.

My first attempt at Bircher muesli and I used this as a guideline rather than adhering to the exact ingredients, mostly because I didn't have them. It was quite good nonetheless, even though I only had apple & elderflower juice and a pear instead of an apple. The only thing that spoilt it slightly for me was the nutmeg (and I like nutmeg) which I found a little overpowering although I only added a tiny grating, therefore I'll omit it next time along with the cinnamon which I'm really not keen on. I did add some sultanas for extra flavour and natural sweetness and topped with fresh blueberries and grapes for some added crunch/texture, as again, I had neither pistachios nor pomegranate. I have another portion left in the fridge which I'm hoping will be even better after the overnight soaking. Next time I'll make this with the apple/juice as stated, omit the nutmeg/cinnamon and possibly add some dried fruit/chopped nuts until I achieve the taste I'm looking for.
