Warm Puy lentil, cherry tomato & halloumi salad

Ready in just 30 minutes, this is a great after-work supper for four (or with leftovers for lunch for two)

Method

  1. Toss the tomatoes, red onion, garlic, lemon juice and olive oil in a bowl. Cook the Puy lentils until just tender, drain and add to the bowl. Season well and toss.
  2. Grill the halloumi until golden. Stir the coriander through the lentils and serve with the halloumi.

    This was absolutely fantastic. Thrown together in 20 minutes with no compromise in taste whatsoever. The tomatoes, lentils and halloumi compliment each other so well. I have a feeling this will be fab as lunch tomorrow as well. Didn't change anything apart from throwing in half a red pepper which needed using up and worked fine.

    this is just THE tastiest thing, my new fave dish for summer!! leave the tomatoes &onion to marinade a little in the lemon &the flavours really burst out. i use 'merchant gourmet' ready done puy lentils, they come in a bag & you just pop them in the microwave for 60secs..sssoooo easy (costs more) but it really does make it a quick dinner. i serve with fresh peas mixed in (cos he-the veggie-loves them) and a jacket potato. or with sausages on the side when made for meat eaters. *mouth watering just thinking about it*

    I love this recipe! So tasty and so simple to make, have added in some rocket which is also nice. Never used puy lentils before and they are fantastic! Recommended

    Really great salad, simple but really filling and tasty for a veggie midweek meal. I added some fresh parsely and mint and also some chopped fresh spinach to make it a bit lighter and served it with hot rolls. Yummy!

    Tesco do some chilli infused halloumi which I used and it was scrummy, I used a tin of merchant gourmet puy lentils as couldn't find any dried. Even carnivore boyfriend loved it.

    This recipe is perfect for hot days like these (32 degrees) It doesn't give you cravings for "real food" after two hours as a lot of salads do. Love it!

    This was delicious! Added a couple of finely chopped green chillis and a bunch of mint. Don't know if we're terrible piggies, but cooked 200g puy lentils and me and the boyf had no problems in scoffing the lot between us. Would never have fed 4.
