Tomato & thyme cod

Ready in 20 minutes and low fat, this fish dish is great for a Monday night when you'd rather be on the sofa than in the kitchen

If the fish was not previously frozen

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

The sauce for this dish can be made up to a day ahead. Simply cool and chill until ready to reheat.

    I made this recipe for a light lunch recently. It smelled delicious while it was cooking, my expectations were not met however. I thought the fish and sauce tasted quite bland. This will sound disgusting... but the leftovers of the recipe the next day - reheated - tasted thicker and the sauce was great. I think that I will use fresh fish next time rather than frozen cod fillets.

    Another wonderful dish! The sauce was rather thick so i added a little frito that i had lurking in the fridge. Also added green pepper which was also hanging around! I used frozen cod and served with new potatoes and steamed veg. Fantastic.

    This went down really well, tho' a bit short on sauce - I added some veg stock to make extra sauce to go over mash. I also added a generous amount of spinach to the pot just before serving.

    I can only agree with evryone else on this one - this dish delivers much more than the simple recipe suggests and has become a regular in our house. Adding some peppers and or courgette makes the sauce a bit chunkier, and I'll definitely try Monkeyhumbles suggestion of using lemon thyme.

    really nice recipie i served with roast new potatoes and asparagus and really went well with it. i have made this a couple of times and tastes alot nicer with more sugar added as can taste bitter if not enough is added

    Really tasty dish. Plenty of sauce as used same quantities but with only 2 pieces of cod. Really simple mid week dinner that I will be making again!

    I'm impressed - so tasty and so easy to make! Like split85 I only cooked for two and had plenty of sauce - I would definitely double the quantities for more servings. I served it together with new potatoes and green beans...spot on!

    Quick, easy & very tasty. We normally add a pepper to the sauce and serve with brown rice and steamed vegetables. Still not tried with thyme as we have rosemary in the garden and have so far always used this. Like others we also use the same quantity of sauce just for two.

  • 400g can chopped tomatoes
  • 1 heaped tsp light, soft brown sugar
  • few sprigs thyme , leaves stripped
  • 1 tbsp soy sauce
  • 4 cod , fillets (we like No Catch) or another white flaky fish, such as pollack
