  • 6 ripe vine tomato, deseeded and chopped
  • 1 small cucumber, diced
  • 1 red onion, very finely chopped
  • 6 tbsp fresh coriander, chopped


  1. Mix together the tomatoes, cucumber, red onion, and chopped coriander, but don’t season until just before serving

I wanted a recipe to use up my home grown cucumbers and this was perfect. It's so quick and simple and could be adjusted in so many ways for variety. I added finely chopped red chilli and salt and pepper last night which was a good start. Will grow corriander next year to go with my home grown cues and toms.

Really easy and I can see it going with a lot of dishes, not just Indian ones. It tasted even better the following day as the flavours had deepened.

Works amazingly with fish with a small splash of lemon - yum!

Looks and tastes lovely. Used only tomato flesh and de-seeded the cucumber to cut down on the liquid. Added lemon juice and avocado just before serving. Will try olives and/or feta next time.

i am looking for a new idea to cook with tomatoes and someone will be assisting me with preparation and this looks like the classsic recipe to follow with ease.

As suggested added juice of half a lime. Was really tasty and I ate the remainder for lunch the next day. Lovely flavours and tasted really fresh.

I've made this salad for years; it's so refreshing, light and healthy but tastes amazing. I use olive oil, a little white vinegar and a tsp of sugar for the dressing and usually serve it with humous, tzatziki and falafel in pita or flatbread. It's also good mixed into bulgar or buckwheat (this reminds me slightly of tabbouleh) and served with yoghurt-marinated chicken or grilled halloumi.

Very light and tasty, perfect accompaniment for tikka-style fish. No need to add any dressing.

Made this twice. The first time round the onion was way too strong (even though I served this salad with bread and quite strong cheese). The second time I used only half an onion and, like kenny007, added some lemon juice.

It turned out really good. Perhaps it would have been better had I served wedges of lemon on the side, because a combination of tomatoes, cucumbers and lemon juice produced a lot of liquid, which can make the salad a bit soggy.

Made this last weekend as a starter together with onion bhajis and raita... I added small cubes of carrots, and seasoned with a little salt and some lemon juice... very nice :-)
