Broccoli & sage pasta

This healthy vegetarian pasta dish just needs to be thrown together and it's ready in a flash

Method

  1. Boil the spaghetti for 1 min. Add the broccoli and cook for 4 mins more.
  2. Meanwhile, heat the oil in a frying pan and add the shallots and garlic. Gently cook for 5 mins until golden. Add the chillies and sage to the pan and gently cook for 2 mins. Drain the pasta, mix with the shallot mixture in the pan, then scatter with Parmesan, if you like.

    Nice. Not being a vegetarian, I always approach non-meat dishes with a little hesitancy, however this one is really nice. Couldn't find any fresh sage so used some dried sage. I'll be cooking this again - quick and simple.

    Couldn't afford Parmesan so went for a proletarian option instead and used Cheddar. Also used extra olive oil. Liked the meal, so did my flatmates. Hooray.

    I've only recently started eating vegetarian options and I thought this was really tasty. I drizzled some good quality olive oil over before serving. It was cheap, quick, and easy so we'll be eating it again. I reversed the 2 steps in the cooking method however as I like both my pasta and broccoli with a bit of bite to it. It says to use quick cook pasta (mine had a cook time of 4mins) then advises to cook the pasta for approx 7-12 mins depending on how you interpret the instructions.
