Sticky lemon chicken

Method

  1. Preheat the oven to fan 170C/conventional 190C/gas 5. Put the chicken breasts, skin-side up, in one layer in a shallow ovenproof dish or tin. Put all the remaining ingredients in a bowl and warm through in the microwave or a small pan for 1 minute, then stir to mix everything together and pour over the chicken.
  2. Slide the dish into the oven and roast the chicken for 30-40 minutes, basting every 10 minutes or so. The juices will gradually thicken and give the chicken a shiny coating at the end. Leave the chicken to stand for 5 minutes before serving with new potatoes and a green salad.

    I have made this several times and the family all enjoy it. You do need to be careful to check the oven regularly because it will quickly burn. A nice easy dish.

    Delicious! Chicken stays moist and has a lovely sticky coating. It is a favourite family supper. One of my favorites too as it is so quick and easy.

    Really lovely taste. Will become a regular event. I only used 1/2 of the lemon juice but all of the lemon zest and found the lemon just right.

    This was great. I was a bit scared at first, because I'm not the biggest honey fan. Whilst it was cooking in the oven, there was a really strong smell of honey, but once it was on the plate it blended in great and wasn't over-powering. I added two lemons, some peppers and corainder to boost it a bit. It was a really nice, light meal. Will be ideal in the summer with some salad! Mmmm.

    This is one of the first "Good Food" recipes I made when I first became a subscriber in 2003. I have made this so many times. It is suitable for family meals yet special enough for informal meals with friends. It is so easy and works well every time.
