Method

  1. Heat the oil in a large, heavy pan. Add the onion, gently fry for 5 mins until softened, add the chicken, then fry until lightly coloured. Add the potatoes, stock and plenty of freshly ground black pepper, then bring to the boil. Cover, then simmer for 30 mins until the potatoes are tender and the chicken is cooked. Can be frozen at this point.
  2. Add the broccoli, spring greens, petit pois and spring onions, stir well, then return to the boil. Cover, then cook for 5 mins more, stir in the pesto and heat through.

Made this as it seemed tasty and healthy. Very good although it didn't look to be at the beginning.
I added some carrots and I also used runner beans, peas and asparagus.
Instead if shop bought pesto I made my own, adding half a chilli which worked really well. Served with homemade garlic bread! Yum

This was so simple to make that I thought I had done something wrong. Both my partner and daughter love this dish. He never liked broccoli but has no problem with it here.

After it had finished cooking and was ready to serve I was thinking it wouldn't be very good because it didn't look great, but it was so tasty and much more filling than I thought it would be. Even my veg hating boyfriend finished his portion! A great dish to get your greens in!

Tried this but the pesto had gone mouldy so didn't have that mixed in. I'm not a veggie person an it looked unappetising but I really enjoyed it and after a bowl I was full.

Quick, easy and very tasty indeed! Added carrots and some garlic -- yum yum! Also froze the whole lot after adding green vege. Might be a bit mushy but I'm sure it'll be fine as there was plenty of juice.

We had this yesterday and it was delicious! So easy and tasty and the pesto adds something really special. Can't wait to have friends over to make it again - a great summer one pot.

Gorgeous recipe - used asparagus and leeks to bulk it out a bit. Absolutely lovely. Served with soured cream on the side and would probably serve with ciabatta or soda bread next time to mop up the juices :)

Nice tasting and healthy but the spring greens - even when shredded - added too much bulk and made for very messy eating. Next time I'd be inclined to use leeks instead, as others have suggested.

Love this recipe. Hearty, filling and healthy all at the same time - fab. Used all the veg suggested, only thing I did different this time was add an extra tablespoon of pesto. The dish was perfect!

Really nice. My only slight criticism would be that the quantities given were perfect for 2 adults, a 1 year old and a 3 year old. If I was making this for 4 adults I'd increase the chicken and potatoes.

yet again another amazing recipe! i was bit dubious about making this dish, but gave it a go, added little bit of spinach and green beans as i didn't have any petits pois, added 1 clove of crushed garlic with the onion and also creme fraiche at the end, and it was amazing! so tasty. my other half doesnt like brocolli or spinach but loved it and cleaned his plate :D will definitely make again very soon.

I love this recipe. Its easy to cook and has a lot of delicious fresh tastes. I find I have to keep topping up with water and If it ends up too watery, I add a little cornflour to thicken it up and it turns into a nice thick sauce. I have used chicken breasts as well as thighs as they are easier to eat. I also use spinach instead of spring greens. I have cooked this a number of times for me and my partner, I have also cooked this for my family and its a real favorite!

Saved me from the mundane weekly cook!! Love this, you can also add a big dollop of half fat creme fraiche at the end and stir it in which makes it delicious and still healthy. Have made this many times, perfect comfort food. Kids love it.

Delicious recipe. I added a tablespoon of cream cheese which gave it a lovely creamy taste. Will definitely be making it again.

I was really sceptical about this recipe and even as I was cooking it was concerned that I wouldn't work. I needn't have worried as it turned out really well. Didn't make any changes to the recipe and didn't think it needed any adjusting. Really tasty, will probably cook this one again.
