Warm Autumn Salad

Ingredients
- 3 Courgettes
- 2 Large Leeks
- 5 Closed cup mushrooms
- Knob of Butter
- Splash of Oil
- Chopped Mint, Rosemary and Thyme
- Bacon
Method
- STEP 1Halve and slice the courgettes
- STEP 2Halve and slice the Leeks
- STEP 3Slice the mushrooms
- STEP 4Melt the butter in a large frying pan, add a tiny splash of oil
- STEP 5When hot, add the bacon to the pan, stirring till cooked
- STEP 6Add the leek and Mushrooms, stirring till the mushrooms are just soft
- STEP 7Add the courgette, continue stirring until just cooked
- STEP 8Stir in the herbs, fry for a further 3 minutes
