  • 8 Pork sausages
  • 2 medium red onions, chopped
  • Stick of celery, chopped
  • 1yellow pepper, sliced
  • 1 red pepper, sliced
  • 2 small apples
  • 300 mm vegetable stock
  • 400 mm cider or white wine
  • 2 medium tomatoes, chopped
  • Tbsp Worcester sauce
  • Par boiled potatoes, if desired
  • 2 Tbsp virgin oil

Method

  • step 1

    Fry the onions, peppers and celery in 1tbsp oil until soft
  • step 2

    Add the sausages and remainder of oil and fry until browned.
  • step 3

    Add all ingredients into a casserole dish, except the apple and tomatoes and potatoes and oven bake for 45 minutes
  • step 4

    Add tomatoes, sliced apple and if desired par boiled potatoes and bake or a further 30 minutes
