Easy tasty banana and chocolate cake

Ingredients

  • 125g butter
  • 150g caster sugar
  • 1 tsp vanilla extract
  • 1 egg, beaten
  • 3 bananas, mashed
  • 100g chocolate chips, white or milk are best
  • 190g self raising flour
  • 60ml milk

Method

    1. Grease and line a 2lb loaf tin. Melt butter, sugar and vanilla in a saucepan over a medium heat.
    2. Remove from heat and add the mashed bananas, mix well.
    3. Add the egg, mix well.
    4. Stir in the flour and the milk. Once combined add the chocolate chips.
    5. Pour into the prepared tin, sprinkle with a tablespoon of demerara sugar to give a crunch topping if liked.
    6. Bake at 150 C fan oven (or 170 C regular, Gas mark 3) for 45 mins, until a skewer comes out clean. Leave to cool and enjoy

Have just made this and it is currently in the oven, not sure how it will turn out yet but the mix was delicious. A tip if you are going to make this is if you have expensive pots with a heavy bottom they keep the heat really well. I found when i mixed in the choc chips they melted from the pot heat. So either quickly transfer the mix to the baking tin or transfer sugar butter mix from pan to a mixing bowl before continuing.

Just made this, absolutely beautiful! I had to cook it for longer than it said but still worked out brilliantly! Very proud of my first banana loaf :) Also I added fudge chips :)

I made this cake for first time for my Son and his wife made it Sunday and was still lovely and moist on Wednesday I did double the quantity and baked in a deep round tin Hence there was some left on weds I am making it again for friends. Best banana cake ever .. :-)

Forgot to add the chocolate chips bit. Put them in last after everything is mixed!
