  • 450g (1 lb) ripe bananas,mashed
  • 50g (2 oz) chopped nuts
  • 100ml (4 fl oz) sunflower oil
  • 100g (4 oz) raisins
  • 75g (3 oz) rolled oat flakes
  • 150g (5 oz) wholewheat flour
  • 2.5ml (0.5 tsp) almond essence
  • pinch of salt

    Method

    • step 1

      preheat the oven to gas mark 5, 190c (375f).
    • step 2

      mix all the ingredients together in a mixing bowl. the consistency should be moist.
    • step 3

      spoon into greased 450g (1 lb) loaf tin and bake in the oven for 50 to 60 mins or until a skewer inserted into the centre comes out clean.
    • step 4

      cool for 10 mins until cool.

    Awesome! Reminded me of the texture of malt loaf dense and sticky, I think you'd actually loose that richness if it were to rise, although it might go further as this didn't last long in my house!!

    I followed this recipe and just added a bit of baking soda to get it to rise as per previous comments. Delicious!

    Used this recipe, as realised I didn't have eggs at last minute. Didn't really rise, tasted quite nice, but not very sweet, and a little unsure about the almond flavour! But quick and easy to do.

    Excellent recipe. I doubled the quantities for a 2lb loaf tin and used half mashed banana and half grated carrot (increase the cooking time by about 20-30mins for 2lb tin). Really moist and lovely - you'd never know there was no added sugar.
