Ingredients
- 2Tbsp oil
- 1 garlic clove chopped
- 1 red chilli chopped
- 1 onion chopped
- 2 red peppers chopped
- 1 yellow pepper chopped
- 2 courgettes finely chopped
- 2 tins beans(blackeye,borlotti etc)
- 150ml tomato passata
- hot chili sauce (optional)
- Flour tortillas,grated cheese,sour cream,guacamole,coriander to serve
Method
- STEP 1Heat oil in the pan+fry the onion for 2 mins before adding garlic,chilli+peppers
- STEP 2Fry mix a few minutes before adding courgettes+beans, add the passata+chilli sauce if using,cook for a further few minutes season with salt+pepper+ serve
