Delicious light vegan curry with cauliflower, green beans, coconut milk, ginger, coriander, caraway and chilli

  • 1 fresh cauliflower
  • 1 handful green beans
  • 1 small onion
  • 200ml coconut cream
  • small knob ginger
  • juice of 1 lime
  • 1 tbsp brown sugar
  • 1 tbsp cajun
  • " coriander
  • 1 tsp caraway
  • " chilli
  • salt, pepper
  • serve with brown rice


    1. Chop the cauliflower and steam the florets. Chop the green beans into short pieces. Start boiling the brown rice.
    2. Fry the onion with the spices, lime juice, ginger and sugar until the mixture is like chutney.
    3. Add the coconut cream and bring to the boil.
    4. Add the cauliflower and green beans and simmer for 5 mins.
    5. Serve with the brown rice.
