Easy to make, Lovely Lemon Cupcakes

- Cake Mix
- 150g Butter
- 150g Caster Sugar
- 3 Eggs
- 150g Self-Raising Flour
- 1 Table Spoon Milk
- 3 Table Spoons Lemon Essence
- Lemon Drizzle Icing
- 200-250g Extra Fine Caster Sugar
- Juice of 1-1 1/2 Lemons
- Decorating
- Thiny Cut Lemon Rind
Method
step 1
Cream Softened Butter and Sugarstep 2
Add Flour, Eggs, Milk and Lemon Essence, Mix untill all the ingredients are combinedstep 3
Spoon into 18 Cake Casesstep 4
Cook in a Preheated oven at 180C for 20-25 min depending on your ovenstep 5
Take out of oven and place on a cooling rack before decorating with Lemon drizzle Icing and Lemon Rind
