A vanilla sponge cake with malt twist.

  • For the mix:
  • 200g butter , cut in pieces
  • 170 self-raising flour
  • 4 tsp bicarbonate of soda
  • 400g golden caster sugar
  • 3 medium eggs
  • 2 tablespoons of horlicks powder
  • half a tea spoon of vanilla extract
  • For the icing:
  • 50g icing sugar
  • 50g cocoa powder
  • 50g or unsalted butter


    1. Set the oven to 170C/fan 150C/gas 5
    2. Cream the butter and sugar together in a mixer or by hand until fluffy.
    3. One by one add in the eggs until thick.Then add in the vanilla extract.
    4. Now add in the horlicks to the flour and fold in to the mixture.
    5. Grease and flour a over proof cake pan and put in the oven for 30 mins then leave to cool for 20 mins.Then sandwich the two cakes together with the butter icing.

Avoid !! This is not a recipe. Its a disaster. My oven is now a total mess. It goes up like a volcano and oozes all over the oven. This should be removed from the site.

I really wish I read the comments before baking. DISASTER!!!! All the proportions are wrong and as others have commented just left with a vile sticky mess every where. Good food - can you take this recipe down to avoid others wasting time and money?

DO NOT USE THIS RECIPE.....It is terrible and completely incorrect.

This recipe is NOT the recipe for the cake in the photo. If you want the recipe for the cake in the photo, it is a Nigella Lawson one. You will not get anywhere near enough icing from this recipe to cover the whole cake. It also sounds like the cake recipe is rubbish from other comments. The real recipe can be found here:

Pleased to find a vanilla malteser cake recipe rather than chocolate so eagerly have tried this. WHAT A DISASTER!!! I thought the ingredients didn't look in quite the right proportions but continued and did as I was told!! However, sure enough there is a volcano of cake mix slowly running over the sides of the tins and dropping on the shelves and the baking sheet I put below them. I left them in for 30 mins just to see but it just ended up a sloppy bit of mixture left in the tin and the rest almost caramelized like brandy snaps. Far too much sugar and bicarb I would guess. What a waste of ingredients : ( and my time having to clean the resulting mess it made of my oven. One star for the idea!

Sadly it might look good but as you'll see from all the comments it's badly wrong. Might be worth removing your 5 star rating? At the moment that is skewing the score!
