Healthy bean risotto, served with salad leaves

  • 1 chopped onion
  • 2 garlic cloves (or more, for your individual preference)
  • 8tbsp risotto rice
  • 4 tbsp red kidney beans
  • 4 tbsp haricot beans
  • Enough veg stock to cover all
  • 4 tbsp parmesan


    1. Fry onion and garlic in a little oil until soft
    2. Add risotto rice and beans, plus veg stock
    3. Bring to the boil, then reduce heat and simmer until rice is cooked
    4. Add more stock if needed
    5. Stir in Parmesan
    6. Serve with a leafy salad

Really glad that someone is simplifying risotto. True, it isn't 'authentic, Italian risotto', but it's still very yummy, not to mention a good deal easier, than having to add the stock ladle-by-ladle. It does work :-)
