Ingredients

  • 1 chopped onion

2 garlic cloves (or more, for your individual preference)

  • 8tbsp risotto rice
  • 4 tbsp red kidney beans
  • 4 tbsp haricot beans
  • Enough veg stock to cover all
  • 4 tbsp parmesan

Method

  • STEP 1
    Fry onion and garlic in a little oil until soft
  • STEP 2
    Add risotto rice and beans, plus veg stock
  • STEP 3
    Bring to the boil, then reduce heat and simmer until rice is cooked
  • STEP 4
    Add more stock if needed
  • STEP 5
    Stir in Parmesan
  • STEP 6
    Serve with a leafy salad
