Bean Risotto

Ingredients
- 1 chopped onion
2 garlic cloves (or more, for your individual preference)
- 8tbsp risotto rice
- 4 tbsp red kidney beans
- 4 tbsp haricot beans
- Enough veg stock to cover all
- 4 tbsp parmesan
Method
- STEP 1Fry onion and garlic in a little oil until soft
- STEP 2Add risotto rice and beans, plus veg stock
- STEP 3Bring to the boil, then reduce heat and simmer until rice is cooked
- STEP 4Add more stock if needed
- STEP 5Stir in Parmesan
- STEP 6Serve with a leafy salad
