Spinach and sundried tomato Tart

  • Ready made tart or shrort bread pastry – follow instruction
  • Medium sized pack of fresh spinach
  • 1 pot of sundried tomatoes in oil
  • 3 cloves of garlic
  • Less than 1 feta cheese
  • A glass of double cream
  • 1 large egg
  • Nutmeg, salt, pepper
  • Optional – 2 teaspoons of sundried tomato pesto
  • Optional: cheese


    1. Drain sundried tomatoes from oil – save oil for frying
    2. Cut sundried tomatoes into pieces
    3. Fry chopped garlic, add spinach continue frying; half way through frying add sundried tomatoes
    4. Add lots of pepper, some salt, and nutmeg
    5. Add feta cheese
    6. Optional: add 2 tea spoons of sundried tomatoes pesto
    7. In a separate bowl whisk one egg and one glass of double cream.
    8. On ready base add fried misture
    9. On top add the whisked egg/cream mixture
    10. Put in preheated oven 180C for 30 mins
