Cheesy spinach rice scramble

Ingredients
- 2 spring onions chopped
- 1/2 bag washed spinach
- 2 eggs
- 1 1/2 oz grated cheddar (or cheese of your choice)
- few spoons of cold leftover rice
- Freshly ground black pepper
- little butter to fry
Method
- STEP 1Melt the butter and gently fry the spring onions for 1 minute
- STEP 2Add the cooked rice and stir 1 mintue
- STEP 3Add the spinach and cook till wilted
- STEP 4Gently beat the eggs, pour over the onion and spinach mix
- STEP 5Add ground black pepper and grated cheese and 'scramble' over a medium heat
- STEP 6Serve with crisp buttery toast
