Ingredients

  • 2 spring onions chopped
  • 1/2 bag washed spinach
  • 2 eggs
  • 1 1/2 oz grated cheddar (or cheese of your choice)
  • few spoons of cold leftover rice
  • Freshly ground black pepper
  • little butter to fry

Method

  • STEP 1
    Melt the butter and gently fry the spring onions for 1 minute
  • STEP 2
    Add the cooked rice and stir 1 mintue
  • STEP 3
    Add the spinach and cook till wilted
  • STEP 4
    Gently beat the eggs, pour over the onion and spinach mix
  • STEP 5
    Add ground black pepper and grated cheese and 'scramble' over a medium heat
  • STEP 6
    Serve with crisp buttery toast
