Quick and easy Saturday morning breakfast / brunch - I would show the picture but so good I've eaten it already!!!

  • 2 spring onions chopped
  • 1/2 bag washed spinach
  • 2 eggs
  • 1 1/2 oz grated cheddar (or cheese of your choice)
  • few spoons of cold leftover rice
  • Freshly ground black pepper
  • little butter to fry


  1. Melt the butter and gently fry the spring onions for 1 minute

  2. Add the cooked rice and stir 1 mintue

  3. Add the spinach and cook till wilted

  4. Gently beat the eggs, pour over the onion and spinach mix

  5. Add ground black pepper and grated cheese and 'scramble' over a medium heat

  6. Serve with crisp buttery toast
