A quick, mid-week meal of ham, asparagus, and peppers that is both tasty and healthy.

  • 3/4 lb. fresh asparagus cut into 1 inch pieces
  • 1 medium yellow pepper, julienned
  • 3 green onions
  • 3 tbsp. olive oil
  • 3 cups diced fresh tomatoes
  • 10 ounces cooked ham, cubed
  • Salt and pepper
  • 1/2 tsp. dried oregano
  • 1/2 tsp. dried basil
  • Pinch of cayenne pepper
  • 1/3 cup grated Parmesan cheese
  • Splash of white wine


    1. Saute asparagus, onions and yellow pepper in oil, until onion is translucent and veggies are tender.
    2. Add tomatoes, ham and wine.
    3. Mix in seasoning. Sprinkle cheese and heat thoroughly.
    4. Serve over pasta or rice.

Did it! Lovely, very 'normal' if you get me...I did it as a stir fry without the ham pieces but served it alongside ham. I'm not much of a fan of asparagus and this makes it really enjoyable. Maybe cut down to 2 tbsps olive oil (but then, is 3/4 lb asparagus a lot?? I used a 'bunch' note that also). I used a red pepper too, didnt have any it brightened up the dish again. Must add...the wine really makes it!! I must confess I added a rather hearty splash to the dish.....just to make sure we could taste it you know!! Cheers, Pepe!
