A wonderful Fruit Cake using Tea, that is just perfect with a cup!!!!!

  • 400g dried mixed fruit
  • 300g granulated sugar
  • 300g plain flour
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 beaten egg


    1. Soak the dried fruit for 2 hours in a mug of boiling hot tea, using 2 tea bags to give a strong taste.
    2. After the fruit has soaked - preheat the oven to 160C/gas 3.
    3. Mix all the ingredients together in a large mixing bowl, then place into a lightly greased round cake tin and bake for 2 hours.
    4. Place on a wire rack to cool, before tucking in!!!!!!

After reading some of the comments about missing info here's what I did. The cake came out really well and is very tasty. I made a mug of tea with 2 bags and left it to steep for 4 mins. I used English Breakfast so quite a robust brew. Removing the tea bags I poured the tea into the fruit and left it for two hours. I added all the dry ingredients and mixed them into the fruit adding the beaten egg at the end. I also added some fresh orange zest and juice from half of the orange. I poured the batter into an 8" by 3.5" lightly greased tin and put it into a preheated oven (reduced temperature and time for fan assist to 150º and 90 mins.)

This made a really horrible cake. I followed the recipe but it turned out bitter, and chewy- Even my husband wouldn't eat it and he sometimes eats stuff I've put in the bin. Save this recipe for when someone you don't like is coming round for tea.

Very disappointing. Unclear recipe. 400g of fruit will,not go into a mug?How much water is added to the tea bags? Do you add that water to the mixture? Important information left out.

Great recipe, my first fruitcake, tastes great! I cut down the sugar to 200g, half brown, half white. 2 smallish eggs. 90 mins on the bottom of an Aga roasting oven, came out perfect. 8"cake tin. Will be doing again for sure!

My first attempt was a failur, although edible, as I only used half the ingredients. Second attempt yesterday, I used half the amount of sugar and the other half I used shredded coconut. I soaked the fruit in a large bowl of Earl Grey and used as much of the liquid necessary to make the mixture slightly wet. I also used 2 medium sized eggs to make the cake lighter. The cinnamon and nutmeg were perfect quantities. The result? Goodness! A very moist, fruity and deliciously light cake.

Disaster! The recipe does not stipulate the amount of liquid to be added other than 'soak the fruit in a mug of tea'. It does not tell you when to remove the teabags and there's no way you can soak that large quantity of fruit in a mug's worth of tea.... I added extra water and milk as the mixture was so dry. Finally the cake tasted awful as I had obviously left the teabags in too long (quite a bitter flavour)and there is also too much cinnamon. I was not happy serving up this lump of lead to the Tennis Club this afternoon for fund raising - this recipe need to be revamped pronto!! Size of tin was not mentioned but luckily I guessed more or less right.... good luck folks!!

Very easy and tasty recipe, I used dark brown sugar as it gives a really intense flavour but found it a bit sweet. This is the second time of making, have doubled it to make a friend one as well but have not doubled up on the sugar, just put in the oven and after baking, will leave in the tin till tomorrow :) Hopefully it will taste just as good but not as sweet!

enjoyed this cake and so easy to do but my fruit fell to the bottom of the cake can anyone let me know how to stop this happening (I did use mixed fruit and some chopped dates was wondering if it was the chopped dates!)
