  • 400g zucchini, trimmed and cut into 1cm slices
  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 8 or so flat-leaf parsley leaves, finely sliced
  • Sea salt and pepper to taste

Method

  • step 1

    Steam the zucchini with a steamer over boiling water for 20 minutes or until very soft.
  • step 2

    Place it in a bowl and drizzle with the olive oil.
  • step 3

    Add lemon juice and parsley and season with salt and pepper.
  • step 4

    Mix with a fork to mash or partially puree the zucchini.
