Steamed Zucchini

Ingredients
- 400g zucchini, trimmed and cut into 1cm slices
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 8 or so flat-leaf parsley leaves, finely sliced
- Sea salt and pepper to taste
Method
- STEP 1Steam the zucchini with a steamer over boiling water for 20 minutes or until very soft.
- STEP 2Place it in a bowl and drizzle with the olive oil.
- STEP 3Add lemon juice and parsley and season with salt and pepper.
- STEP 4Mix with a fork to mash or partially puree the zucchini.
