Delicious savoury fritters

  • 180g haloumi, grated
  • 2 zucchini, grated
  • 3 shallots, finely chopped
  • 2 tbsp plain flour
  • 1 egg, lightly beaten
  • Salt & pepper


    1. Put haloumi, zucchini, shallots, flour & eggs into a bowl, season. Stir to combine.
    2. Heat 2 tbsp oil in a large non stick frypan over a medium heat.
    3. Cook heaped tbsp's of mixture, about 6 at a time for 2-3 minutes each side until golden brown.
    4. Drain on paper towels and serve.

I had issues as above that they were quite sloppy, even after squeezing the water out, which meant I had issues cooking them. However, the flavours were lovely and once I've worked out how to cook them, they'll be great!

Lovely and tasty, really easy to do, make sure you squeeze as much of the juice from the grated zucchini as poss or they are too watery
