Prawns in a marinade with garlic and chilli

  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp lemon juice
  • 1 tbsp light muscovado sugar
  • 1 fresh red chilli, thinly sliced
  • 5 cloves chopped garlic
  • 150g cooked prawns
  • 4 spring onions, 4-5cm lengths, cut lengthwise
  • A little oil for stir-frying


    1. Make the marinade by combining oyster sauce, soy sauce, fish sauce, lemon juice, sugar, chilli and garlic in a bowl
    2. Add the prawns to the marinade
    3. Add a little oil to a skillet and once hot add the prawns and the marinade then add the spring onions
    4. Stir and distribute evenly in the skillet then bring the marinade to a lightly bubbling heat and leave for 2 minutes
    5. Serve with boiled rice or noodles NB Allow cooking time for these to be ready with the prawns
