  • 1 tbsp olive oil
  • 1 tbsp creme fraiche
  • good squeeze of lemon juice
  • Salt and pepper
  • Fresh herb to garnish (eg. parsley, oregano)

    1. Cook the pasta according to the packet.

    4. Drain the pasta and reserve a small amount of the water to thin the sauce if you want. Add to the sauce and stir in. Serve.

Just made this. I had a leek to use up so added that. Also added thyme. I didn't have any creme fraiche, so used quark. I got it wrong with a good squeeze of lemon... overdid it! Then I tried it and it needed the addition of parmesan. It was fine as a quick supper, but not posh, just nice and comforting.

Used ricotta instead of creme fraiche as it was what I had in. So used extra lemon juice as ricotta didn't have the same acidity as creme fraiche. Very nice.

I cooked this dish for my wonderful husband. He liked it but said that it wasn't really very posh - I agree with him, but then I am a bit of a dragon! Make sure you use a nice collection of exotic mushrooms and this dish would be divine...

Don't scrimp on the mushrooms! I thought this sounded like a lot of mushrooms so I only put in 3 chestnut mushrooms per portion, but by the time I'd added the pasta, I only got a piece of mushroom every few mouthfuls which was a shame

This recipe is lovely as it is, but you can also try it with smoked salmon! With or without the mushrooms, salmon goes so nicely with the creamy sauce :) I've never tried it with salmon and garlic though
